ambrosia

 

Varietal: 50% Yellow Muscat, 50% Muscat Ottonel

 

Ambrosia is produced using the méthode traditionnelle, maturing on yeast for at least 36 months.

 

Alcohol vol. 13,5%, semi-dry (sec), up to 21 g/l of residual sugar.

 

The sparkling wine is typical gentle lime yellow in colour, characterized by fine bubbles and long-lasting sparkling foam.

The aromas that we find are quintessentially those of Muscat, while even slightly spicy, which fascinate lovers of sweeter sparkling wines. The flavour indicates a nurtured sparkling wine which has matured on yeasts for a long time.

Sparkling wine keeps all the precious flavours of Muscat and Muscat Ottonel enriched with minerals acquired in our vineyards of Karst soil of terra rosa and flysch (marl). The vineyards are situated at the very edge of the Vipava Valley turning into Karst.

FLORIDIA

 

Varietal: 100% Pinot Noir

 

Floridia is produced using the méthode traditionnelle, maturing on lees for at least 36 months.

 

Alcohol vol. 13,5%, extra brut, up to 5 g/l of residual sugar.

 

Sparkling wine has a typical gentle onion colour.

The aromas that we detect are fine, fresh and fruity. We also detect the smell of raspberries. These fine aromas indicate a nurtured sparkling wine which lay on yeast for a long time.

Sparkling wine keeps all the precious flavours of Pinot Noir enriched with minerality acquired in our vineyards of Karst soil of terra rosa. The vineyards are situated at the very edge of the Vipava Valley turning into Karst. Maturing on yeast gives the wine a ripe taste of wild cherry and raspberries.

Recommended as an aperitif and as accompanying drink to seafood, raw or smoked fish, poultry, and various cheese.

PALLIDIA

 

Varietal: 100% Malvasia

 

Pallidia is produced using the méthode traditionnelle, maturing on lees for at least 36 months.

 

Alcohol vol. 13,3%, Brut Nature (no expedition liquor added) , up to 3 g/l of residual sugar.

 

Of distinctive straw yellow colour, characterized by fine bubbles and long lasting foaming.

The aromas that we detect are fine, fresh and fruity. We also notice the scent of citrus fruits and bread crust. These fine aromas indicate a nurtured sparkling wine which lay on yeast for a long time.

Sparkling wine preserves the noble taste of local Malvasia enriched with the mineral content that is obtained in our vineyards from the mixture of Karst soil Terra Rossa and flysch. The vineyards lie at the turning point of the Vipava Valley into Karst. Several years of maturation on yeast gives the wine a bold and mature taste.

Recommended as an aperitif and as accompanying drink to seafood, fish, poultry, and pasta.

TENEBRA

 

Varietal: 100% Refosco (Terrano PDO)

 

Tenebra is produced using the méthode traditionnelle, maturing on lees for at least 36 months.

 

Alcohol vol. 12,5%, Extra Brut , up to 12 g/l of residual sugar.

 

Tenebra has characteristic colour of dark ruby, distinguished by fine bubbles and long-lasting sparkling foam, which is particularly evident on the edge of a glass.

The aromas that we find are mature, fruitful, especially the scent of raspberries and dry plums. These mature aromas show a well-groomed sparkling wine, which ripened on yeast for a long period of time.

Tenebra preserves all the noble flavours of Refosco, which produces the Teran wine, enriched with mineral content obtained in our vineyards on Terra rossa soil. The vineyards lie at the turning point of the Vipava Valley into Karst.

We recommend it as a companion to dried meat products, meat dishes with wine aromas, grilled meat, baked duck with chestnut, slow roasted octopus under charcoal, black chocolate desserts, and chestnuts.

All our wines are based on carefully hand-picked grapes. Enriched by the minerals coming from the vineyards that sit on the Karst soil terra rosa, where Karst and Vipava valley discretely meet.

 

cabernet sauvignon

 

Varietal: 100% Cabernet Sauvignon

 

Origin: Na ovinku, terra rossa of Karst.

Harvest: hand picked at overripe phase and processed in a state of the art destemmer.

 

Maceration on grape skins lasts 20 days before a two year long controlled fermentation at 18°C in barrique barrels.

 

The wine has a distinctive ruby colour with a degree of purple. Seductive and fruity aromas bring dry plums, red currant and other wild berries to mind, with a gentle hint of herbs.

Dry on the palate, with silky tannins and pleasant acids that bring forth its character and longevity while a taste of raspberries and ripe red cherries are most predominant.

 

We recommend it veal, game and other red meat.

modri pinot

 

Varietal: 100% Pinot Nero

 

Origin: Dolina, terra rossa of Karst

Harvest: hand picked and processed in a state of the art destemmer.

 

Maceration on grape skins proceeds in the first 18 days and is followed by controlled fermentation at 18°C in classic wooden barrels, where it matures for 18 months. Pinot noir is produced only from the best vintages. The rest are used to make our sparkling rosé Floridia. Pinot noir is a fair reflection of its wine maker. Style, accuracy and its audacity are all on display with this still classic.

 

Pinot noir has a characteristic ruby colour. Aromas are refined and unmistakable. Gentle notes of cherries, dry plumbs and leather always come to mind.

 

We recommended it with red meat, veal and game.

TERAN PTP

 

Varietal: 100% Refosco

 

Origin: Na ovinku, terra rossa of Karst.

Harvest: hand picked at overripe phase and processed in a state of the art destemmer.

 

Maceration on grape skins for 7 days before a minimum 10 month long controlled fermentation at  18°C in classic 1000 L barrels.

 

Teran PTP has an intensive ruby colour.  Obvious fruity aromas with a strong raspberry and blackberry undertone. This dry wine has a full bodied fruity flavour and pleasant acids, both being its most distinctive characteristics. The taste of raspberry and wild berries is also predominant on the palate.

 

We recommend it with veal, game, grilled meat and traditionally with dry prosciutto.

malvazija

 

Varietal: 100% Malvasia

 

Origin: Kovačevca I., marl flysch of Vipava

Harvest: hand picked and processed in a state of the art destemmer.

 

Maceration on grape skins lasts 5 days without adding the selected yeasts. The wine matures in 1000 L classic wooden barrels.

 

With gentle straw yellow colours it acquires fine, fresh and fruity  aromas with a hint of vanilla also. These fine aromas are a clear depiction of a neatly catered wine. Maceration and wooden barrels make this wine mature and flavourful.

 

We recommend it with sea food and poultry.

sauvigNon

 

Varietà: 100% Sauvignon blanc

 

Origin: Hrib, terra rossa of Karst.

Harvest: hand picked at overripe phase and processed in a state of the art destemmer.

 

Maceration on grape skins for 3 days before a 12 month long controlled fermentation at  15°C in classic 1000 L barrels.

 

With a shy golden-yellow colour, Sauvignon gives away its fine, fresh and fruity aromas. It is known to bring honey and spring meadows to mind. Maceration and barrels give it a matured taste.

 

We recommend it with wild asparagus, scampi, lobster and truffles.
